Gigi’s Lentil Soup
Ingredients
- 1 16 oz. bag of lentils (dry)
- 1 veggie broth or chicken broth (then refill with water)
- 1 large can petite diced fire roasted tomatoes
- 1 tsp olive oil
- 2-3 bay leaves
- 1 frozen chopped spinach
Instructions
- Add lentils, broth, water to large pot. Bring to a boil. Lower flame and simmer.
- Add petite diced fire roasted tomatoes, olive oil and bay leaves. Let simmer for 1 hour.
- Turn flame off add frozen chopped spinach to center of pot, stir.
- I garnished with garlic and red pepper flakes!
