Gigi’s Lentil Soup

Ingredients
  

  • 1 16 oz. bag of lentils (dry)
  • 1 veggie broth or chicken broth (then refill with water)
  • 1 large can petite diced fire roasted tomatoes
  • 1 tsp olive oil
  • 2-3  bay leaves
  • 1 frozen chopped spinach 

Instructions
 

  • Add lentils, broth, water to large pot. Bring to a boil. Lower flame and simmer.
  • Add petite diced fire roasted tomatoes, olive oil and bay leaves. Let simmer for 1 hour.
  • Turn flame off add frozen chopped spinach to center of pot, stir. 
  • I garnished with garlic and red pepper flakes!
